Homemade Almond Cranberry Granola Bars

Recipe Ingredients for Homemade Almond Cranberry Granola Bars 7/31/09

2 cups oats
2 cups kashi golean crunch
1 1/2 cups almonds
1/4 cup flax seed, ground
1/4 cup wheat bran
1/2 cup honey
1/2 cup brown rice syrup
1/4 cup brown sugar, unpacked
1 cup dried cranberries
2 tablespoons almond butter
1 tablespoon ground cinnamon
1 tablespoon vanilla extract

Recipe Directions for Homemade Almond Cranberry Granola Bars 7/31/09

  1. Mix all dry ingredients together except dried fruit and spread on 2 baking sheets.

  2. Toast at 275 for 10 minutes. Mix up once to make sure you don't burn the mixture.

  3. While that is toasting, heat honey, syrup, sugar, nut butter and vanilla in small saucepan over low heat.

  4. Take out toasted ingredients and mix in dried fruit.

  5. Add glue mixture a little at a time and mix thoroughly.

  6. Line an 8 x 13 pan with parchment paper.

  7. Spoon in mixture and spread and flatten as best possible. Pack mixture tight so it sets together well.

  8. Fold over overhang of paper or use another sheet to place over top of flattened mixture.

  9. Take a second 8 x 13 pan and set on top. Add in some heavy books to flatten mixture and keep weight on it.

  10. Let cool completely. Speed process in fridge. I usually put in freezer for an few hours.

  11. Take large granola bar out of pan. Cut into bars on cutting board (large, sharp knife suggested).

  12. Wrap individual granola bars in wax paper or line Tupperware container with wax paper and stack lines of bars.

  13. Eat, enjoy and refrigerate the rest.
