Tasty home made vegetable soup, just like my mother makes it!

Recipe Ingredients for Home made vegetable soup

1 onion
6 carrots
1 courgette
4 celery stalks
2 potatoes
1 leek
5 mushrooms
3 stock cubes
1 cup lentils
5 g coriander leaves
15 g butter
1 tbs extra virgin olive oil

Recipe Directions for Home made vegetable soup

  1. chop up all vegetables and sauté in the butter and oil for 5 mins

  2. make stock from 1 gallon of boiling water and 3 ham stock cubes

  3. pour into pan sufficiently covering all vegetables

  4. add coriander leaves, season with salt and pepper

  5. simmer for at least 1 hour
