Recipe Ingredients for Home made vegetable beef soup

10 cups water
1 1/2 pounds beef shank (bone in)
28 oz canned whole tomatoes (cut up)
1 onion (diced)
3 beef bouillon cubes
2 carrots (sliced)
1/2 c celery(sliced)
1/2 c eggplant
2 potatoes (diced)

Recipe Directions for Home made vegetable beef soup

Simmer beef in water till tender. Put in refrigerator until fat hardens on top. Skim off fat. Cut beef from bone and into bite-sized pieces. Add rest of ingredients and simmer until vegetables are tender.
