Amazing home made tomato soup. If you do not mind the extra calories, double the butter, use olive oil when roasting the tomatos, and add 1/2 cup heavy cream at the end just before blending.

Recipe Ingredients for Home Made Tomato Soup

2 Serving Tomatoes
2 stalk, medium (7-1/2" - 8" long) Celery
2 small (5-1/2" long) Carrots
2 medium (2-1/2" dia) Onions
4 clove Garlic
2 cup Vegetable Broth
1/2 cup leaves, whole Basil, Fresh
2 tbsp Butter
4 tsp pepper
1 tbsp olive oil
1 gram salt

Recipe Directions for Home Made Tomato Soup

  1. Preheat oven to 450 degrees F.

  2. Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, spray with olive oil cooking spray and roast until caramelized, about 15 minutes.

  3. Meanwhile, in a saucepan, heat 1 tbsp olive oil over medium-low heat. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, vegetable broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil, if using. Puree with a hand held immersion blender until smooth.
