Make yummy and healthy vegetarian refried beans. It takes a long time, but it pays off.

Recipe Ingredients for Home made refried beans

2.5 cup Beans, Pinto, Mature Seeds
8 oz Tomatoes Diced with Green Chilies
4 clove Garlic
1/2 cup chopped raw Vidalia Onion
3 tsp Cumin Seed
2 serving, raw Cilantro
1 tsp Salt, Table
1 tbsp Olive Oil

Recipe Directions for Home made refried beans

  1. Soak 1 lb package of pinto beans for 8 hours. Drain and rinse.

  2. In a large pot, heat olive oil and sautee onion and garlic. Add drained can of tomatoes with chiles, beans, and cover with 2 inches of water.

  3. Boil for 3-3.5 hours, adding water as needed. For the last 30-45 min, allow water to boil off, do not refill.

  4. With a wand food processor or masher, mash the mixture.

  5. Serve.
