I typically 4x's the recipe. That way I have it handy for several days.

Recipe Ingredients for Home-made Granola

3 cups rolled oats
1 cup pecans, diced
1/4 cup shredded coconut
1/4 cup brown sugar
1/4 cup maple syrup
1/4 cup canola oil
1/4 tsp salt
1 cup craisins

Recipe Directions for Home-made Granola

  1. combine oats,nuts, and coconut in a large mixing bowl.

  2. in a separate bowl whisk together sugar,syrup,oil and salt.

  3. pour the syrup mix over the top of the oats and toss until evenly coated.

  4. spread out a thin layer on a jelly roll pan (aka sheet cake pan)

  5. bake in the oven at 250 for 30 mins.

  6. then check it, break it up a bit, then continue to bake for another 30 minutes or until golden brown.

  7. Once done, remove from oven and let it cool in the open air - this will help dry it out and give it a nice crunch.

  8. Add caisins, or other dried fruit and enjoy.
