This is NOT a low fat or healthy version. Just one I cook for my husband and wanted to know how many calories are in a slice.

Recipe Ingredients for Home Made Corn Bread

2 cups corn meal
3 eggs
1 1/2 cups buttermilk
1/2 cup lard

Recipe Directions for Home Made Corn Bread

  1. Preheat iron skillet in 450 degree oven with 1/4 cup lard. Mix buttermilk and eggs.

  2. Melt remaining 1/4 cup lard in microwave.

  3. Measure out 2 cups self rising corn meal in mixing bowl, pure in melted lard and liquids. Blend until mixed well and let sit for 10 minutes.

  4. Remove hot skillet from oven and pour in batter. Return to over and cook 20-25 minutes till brown around edges.
