Recipe Ingredients for Home-made Chicken Soup

1 lb chicken
3 stalks celery
3 medium carrots, chopped
1 small onion, chopped
6 cups water
1 oz ginger root
1 medium potato
1 tsp salt
1/2 tsp black pepper

Recipe Directions for Home-made Chicken Soup

Put chicken bones from roasted chicken, 1/2 onion, chopped, 1 carrot, chopped, and 1 stalk of celery chopped into a large pot and add water just to cover. Bring to a boil and turn down to simmer for 1 hour. Take out chicken bones and skim fat. Peel ginger and add to broth. Add 1 pound of roasted chicken, remaining carrots, celery, and onion, and simmer for 20 minutes. Add potatoes and simmer for 10 minutes.
