Recipe Ingredients for Home made Buttermilk Corn Bread

2 cups cornmeal
2 cups flour
1/2 cup Splenda
1 tsp. salt
1 tbsp. baking powder
2 tsp. baking soda
6 egg whites
2 cups buttermilk
1/2 cup salad oil

Recipe Directions for Home made Buttermilk Corn Bread

Preheat oven to 350 degrees. Place a very large cast iron skillet into the preheating oven (sprayed with cooking spray). Stir dry ingredients together. For the best flavor, use whole grain (half coarse, half fine) cornmeal. Blend in egg whites, buttermilk, and oil with a spoon or slow speed on a mixer. Remove skillet from oven and pour batter into it. Return to oven and bake for 35-40 minutes (insert table knife to check for doneness - if it comes out clean, bread is done). Slice into about 12 wedge-shaped pieces.
