Recipe Ingredients for Home-fried potatoes

3 pounds yukon gold potatoes,quartered
3 tablespoons Olive Oil
1 large yellow onion, sliced
3 cloves garlic, minced
1 teaspoon paprika
1/4 teaspoon salt
1/2 tsp. freshly ground pepper
1/4 cup fresh parsley, chopped

Recipe Directions for Home-fried potatoes

  1. Add potatoes to a steamer basket in a 4 quart (4.5 L) pot, and steam until tender but still firm, (12 to 15 minutes). Let cool, and then cut into 1/2 inch, (1 cm) cubes.

  2. Meanwhile, in a large-size skillet, heat 1 tablespoon oil over medium-high heat. Add onion and garlic, and cook, stirring often, until it starts to brown, about ten minutes.

  3. Add 1 tablespoon oil and cubed potatoes to skillet. Add paprika, salt, and pepper. Cook, stirring occasionally, until potatoes are browned, 15 to 30 minutes. When turning the potatoes, use a flat spatula to take care that you don't mush them.

  4. While potatoes are cooking, add remaining 1 tablespoon oil and chopped parsley. combine well and serve.
