Real Hollandaise - not that gunk from a powder package!

Recipe Ingredients for Hollandaise Sauce

1/4 cup butter
2 egg yolks
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Hollandaise Sauce

  1. Cut butter into 6 pieces

  2. Whisk together 3 pieces of butter and egg yolks, holding pan over burner, but not ON burner (very gentle heat)

  3. Continue whisking until all butter is melted

  4. Add last 3 pieces of butter, continue whisking constantly

  5. Sauce should turn very smooth and thick

  6. Add lemon juice, salt if desired, and pepper

  7. Whisk some more, then serve
