Recipe Ingredients for Hollandaise Sauce

2 tablespoons lemon juice
3 large egg yolks
1/2 cup unsalted butter
1/4 teaspoon cayenne
1/2 teaspoon salt

Recipe Directions for Hollandaise Sauce

  1. In a small saucepan, beat egg yolks with lemon juice, cayenne and salt.

  2. Place saucepan over a double boiler with simmering water. Stir in butter with a whisk until it melts in. Remove from heat when just blended.
