Recipe Ingredients for hollandaise sauce

4 large Egg, Yolk
4 tbsp Organic Butter
2 wedge yields Lime Juice
1 tsp Pepper, Red Or Cayenne

Recipe Directions for hollandaise sauce

  1. Separate egg whites from yolks

  2. Whisk yolks together with lime juice until volume doubles

  3. heat pan using double broiler

  4. melt butter

  5. slowly add egg mixture to butter

  6. keep whisking

  7. remove when blended

  8. add cayenne pepper

  9. add salt to taste

  10. pour over eggs
