Homemade Hollandaise Sauce-Blender/Not Cooked Makes about 1 cup sauce. 1 Tbs. Hollandaise Sauce is about 70 calories

Recipe Ingredients for Hollandaise

1 stick Butter
3 large Egg, Yolk
2 dashes cayenne pepper
1 tbs. lemon juice
1 salt, as needed

Recipe Directions for Hollandaise

Separate 3 yolks and put in blender or Cuisinart. Save whites for another dish. Add 2-3 dashes of cayenne and 1 Tbs. fresh squeezed strained lemon juice to eggs. Blend briefly to mix. Melt 1 cube butter (with salt). If using unsalted butter you will need to add 1/4 tsp. salt. While blender is going, very slowly add melted butter in a steady stream until thoroughly blended and sauce thickens to a creamy yellow. Serve now or later. The sauce should continue to thicken as it sets. Refrigerate if not using right away. Our family uses this our Christmas Eggs Benedict or as a fondue sauce for meat & veggies. It also tastes delicious spread on sourdough french bread for a special treat. Definitely very bad for you if you are counting your calories!
