This meatloaf is great to fix with leftovers from the holidays. It is tasty any time.

Recipe Ingredients for Holiday Meatloaf

20 oz ground turkey
1 cup sweet potato
1 large red onion, chopped
1/4 cup rolled oats
1 egg, raw
8 oz mushrooms
1 carrot, grated
1/2 tsp nutmeg
1/4 tsp salt
1/2 tsp ginger
2 tbsp maple syrup

Recipe Directions for Holiday Meatloaf

  1. Mash up a peeled, baked sweet potato.

  2. Mix it in a large mixing bowl with remaining ingredients except the maple syrup..

  3. Spread the mixture in a 8" x 8" baking dish and bake at 350 degrees for 45 minutes.

  4. Spread Maple syrup on top and bake another 10-15 minutes.
