Recipe Ingredients for Holiday Lentil Loaf

1 small onion
1 clove garlic
2 stalks celery
2 tsp sage
3 cups lentils, cooked
1 1/2 cups quinoa, cooked
1/4 cup breadcrumbs
2 tbsp vinegar
2 egg whites
2 tbsp whole wheat flour
1/2 tsp salt
1/4 tsp pepper
1/2 cup walnuts, chopped

Recipe Directions for Holiday Lentil Loaf

Preheat oven to 350 degrees. Chop onion and celery finely and crush the garlic clove. Spray a frying pan with nonstick spray, saute onion, celery and garlic until onion is translucent. Add sage. Combine all ingredients in large bowl and mix well. Spray loaf pan and fill with mixture. Press down. Bake 30 minutes covered, 10 minutes uncovered. Let stand for 5-10 minutes before cutting and serving.
