Hoisin Eggplant, Tofu & Bok Choy Stir-Fry Recipe

Recipe Ingredients for Hoisin eggplant, tofu & bok choy stir-fry

2 tbsp sesame oil
300 g baby eggplants, halved lengthways, thickly sliced
175 g extra firm tofu, low fat
2 tbsp ginger, grated
2 garlic cloves, crushed
500 g baby bok choy, roughly chopped
3 tbs hoisin sauce
1 tbs rice vinegar

Recipe Directions for Hoisin eggplant, tofu & bok choy stir-fry

  1. Heat 1 tablespoon oil in a wok or large frypan over medium-high heat.

  2. Add eggplant and cook, stirring occasionally, for 3-4 minutes until softened and lightly browned.

  3. Add remaining oil, tofu, ginger and garlic to wok. Cook, stirring, for 2 minutes.

  4. Reduce heat to medium, then add bok choy, hoisin and rice vinegar and cook, stirring, for 2 minutes or until the bok choy is just wilted and the mixture is coated with sauce.

  5. Serve the stir-fry with steamed rice if desired.
