Chicken preparation modified from about.com "Honey hoisin chicken" recipe shared by boathoff. My attempt at preparing my favorite item off the Paladar bar menu.

Recipe Ingredients for Hoisin Chicken Paladar Arrapas w/ Black Beans

1 3/4 lb chicken breast
5 oz onion, sliced, about 1/2 of a large onion, divided
3/4 c white wine
1/4 c orange juice
3 T hoisin sauce
1 T soy sauce
1 T honey
1 T ginger root or 1 t ground ginger
1/8 t ground black pepper
2 T red wine vinegar
2 T balsamic vinegar
1/2 T sugar
1/2 t ginger
1 c skim milk
2 c water
2 T sugar
1 t salt
1 c corn meal
15 oz black beans, warmed
3 oz queso fresco, crumbled
4 oz plain yogurt
1 oz roasted red peppers
1 T grainy mustard
1 clove garlic, minced

Recipe Directions for Hoisin Chicken Paladar Arrapas w/ Black Beans

  1. Arrange chicken in bottom of slow cooker. Top with half of the sliced onions.

  2. Combine soy sauce, hoisin sauce, honey, wine, juice, ginger and pepper. Pour sauce over chicken. Cover and cook on low about 5 1/2 to 8 hours, or until chicken is tender and juices run clear.

  3. Combine remaining onion slices with vinegars, sugar and ginger. Toss. Cover and chill.

  4. To make the polenta, combine water, milk, sugar and salt in saucepan over medium heat. Bring to a simmer, whisk in cornmeal. Continue whisking until thickened and smooth.

  5. To make red pepper sauce, process together garlic, yogurt, red peppers and mustard.

  6. To serve, spoon polenta onto plate, top with chicken, pickled onion slices, black beans, 1/2 T fresh mexican cheese and spicy red pepper aioli sauce.
