From All-New Complete Cooking Light Cookbook, p373. Hoisin sauce, rice wine, and soy sauce give the barbecue sauce an Asian twist. Marinating the chicken overnight is the key to great flavor. NOTE: The chicken to be used should not be boneless: use 8 drumsticks and 8 thighs, skinned and trimmed (about 2 pounds each).

3 serving Rice Wine Vinegar
3 serving Soy Sauce
3 tbsp Ketchup
6 tsp unpacked Sugars, Brown
3 tsp Garlic
8 thigh, bone and skin removed Chicken, Thigh, Meat Only
8 drumstick, bone and skin removed Chicken, Drumstick, Meat Only

Recipe Directions for Hoisin Barbecued Chicken (Cooking Light Cookbook)

  1. To prepare barbecue sauce, combine hoisin, rice wine, soy sauce, ketchup, brown sugar, and minced garlic in a medium bowl. Place 3/4 cup sauce in a large bowl, cover and chill remaining barbecue sauce.

  2. Add chicken to barbecue sauce in large bowl, toss to coat. Cover and marinate chicken in refrigerator 8 hours or overnight.

  3. Preheat oven to 375F.

  4. Remove chicken from bowl, reserve marinade. Place chicken on a broiler pan coated with cooking spray. Bake at 375F for 30 minutes. Turn chicken and baste with reserved marinade. Bake an additional 20 minutes or until done. Discard marinade.

  5. Bring remaining 3/4 cup barbecue sauce to a boil in a small saucepan; reduce heat, and cook until slightly thick and reduced to about 1/2 cup (about 5 minutes).

  6. Drizzle chicken with sauce (about 1 tbsp per serving of 1 drumstick and 1 thigh).
