Recipe Ingredients for Hodgson Mills Whole Wheat Flax Apple Muffins

1/4 cup flax seed
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg
1 1/2 cups chopped apples
3 tbs. canola oil
1/2 cup 1% milk
1/2 cup chopped walnuts

Recipe Directions for Hodgson Mills Whole Wheat Flax Apple Muffins

  1. Blend dry ingredients.

  2. In a separate bowl, beat egg and blend with milk and oil.

  3. Add dry ingredients to wet ingredients and stir until just blended. Do not over stir. Batter should be stiff.

  4. Add apples and walnuts. Fold in gently.

  5. Fill prepared muffin tins and bake in 400 deg F oven for 18 -- 20 minutes or until done.
