Corn muffins from Hodgson Mill's corn meal bag.

Recipe Ingredients for Hodgson Mill Cornmeal Muffins jmw

1 1/2 cups Yellow CornMeal
1 cup wheat flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup sugar
1/2 teaspoon salt
1 cup buttermilk
1 egg
1/4 cup canola oil

Recipe Directions for Hodgson Mill Cornmeal Muffins jmw

  1. Grease muffin tins.

  2. Preheat oven to 400 degrees.

  3. Mix dry ingredients together.

  4. In another bowl, combine buttermilk, egg and oil.

  5. Pour liquid into dry and mix just until blended. Let sit for 5 minutes.

  6. Spoon into muffin tins, filling 3/4 full.

  7. Bake for 15 minutes or until tops of muffins are golden.

  8. Remove from pans and serve immediately.

  9. Makes 12 muffins.
