Recipe Ingredients for High Protein Pancakes

1 1/2 cups summer squash
1 egg
1 egg white
1 cup oatmeal
1 teaspoon garam masala
1 teaspoon vegetable oil

Recipe Directions for High Protein Pancakes

  1. Use either canned pumpkin or cook your own pumpkin, squash or vegetable (or fruit for that matter).

  2. Put all ingredients except the vegetable oil in the food processor and blend until relatively smooth. The oatmeal will keep it from being entirely smooth. It should be just a bit thicker than regular pancake batter. If you let it sit out too long, it becomes significantly thicker and harder to cook/less pancake like.

  3. Fry in a pan with the vegetable oil lightly coating the surface. You can also use non stick spray.

  4. They cook very quickly.

  5. Serve with yogurt, bananas, walnuts or whatever other topping you'd like.
