Made with a packet of a special high-protein oatmeal I get at a weight loss center, the fiber is high as well.

Recipe Ingredients for High Protein Oatmeal Muffins

1 serving NL High-protein Oatmeal (pkt)
1/2 serving Ideal Brand Xylitol (2 tbsp)
1/2 oz oat bran
1/2 oz ground flaxseed
1/4 tsp baking powder
3 tbsp liquid egg whites
1/4 cup 2% milk

Recipe Directions for High Protein Oatmeal Muffins

  1. Preheat oven to 375F. Grease or spray a mini-muffin pan, 8 wells.

  2. Stir together Oatmeal, Xylitol (or substitute Splenda), oat bran, flaxseed, and baking powder.

  3. Mix in the egg whites and milk. If batter seems thin, it will thicken on standing.

  4. Divide evenly into 8 wells of the mini-muffin pan. Bake for 15 minutes. Remove from pan and cool on rack.

  5. 4 muffins = 1 serving
