Recipe Ingredients for High Protein/Fiber Muffin

3/4 cup ground flax seed
3/4 cup soy milk
1/3 cup molasses
1 egg
6 oz plain yogurt
1 cup whole wheat flour
1/2 tsp baking powder
1/2 tsp baking soda

Recipe Directions for High Protein/Fiber Muffin

  1. Above is base recipe, now add your flavor! (1/2 cup chopped frozen fruit or try cup shredded carrot with cup raisins, the possibilities are endless!)

  2. Preheat oven to 350 degrees, and prepare muffin tins

  3. Cream wet ingredients together.

  4. Add dry ingredients to the wet, until well moistened.

  5. Baked for 25 minutes ? will make 6-8 muffins, depending on how much you want to fill the tins.
