Uses packaged high protein chicken broth as a base; but tastes homemade!

Recipe Ingredients for High Protein Cream of Broccoli Soup

1 cup broccoli florets
1 serving NL High Protein Chicken or Beef Broth (pkt)
1/2 tsp Onions, Dehydrated Flakes
6 oz hot water
1/4 cup half and half
1 ounce reduced fat cheddar cheese, grated
1/8 tsp black pepper

Recipe Directions for High Protein Cream of Broccoli Soup

  1. Chop broccoli florets. Boil in 1 cup water until tender but still bright green. Reserve cooking water.

  2. Mix chicken broth packet and dehydrated onions in 6 oz of the reserved cooking water until smooth. Stir in half and half and cooked broccoli. Transfer to blender or food processor. Process until mixture is smooth and creamy.

  3. Heat mixture to serving temperature (on stovetop or in microwave) but do not overheat. Stir in cheese and black pepper.
