A high fibre casserole that can be adjusted with different beans or vegetables. Try adding zucchini or replacing lentils with black beans and adding chile powder for a Mexican flavour

Recipe Ingredients for High fibre shepherds pie

1 lb lean ground beef
1 tsp garlic
19 oz lentils
28 oz diced tomatoes
1 cup chopped carrots
1/2 cup chopped onion
1/2 cup diced celery
1/4 cup ketchup
1 tsp dried thyme
1 cups chicken broth
2 cups sweet potatoes
1 cup corn kernels
1 can tomato paste
1/4 cup parmesan cheese

Recipe Directions for High fibre shepherds pie

  1. Brown ground beef with onions, carrots, celery and garlic

  2. Add lentils, diced tomatoes, ketchup, thyme, chicken broth and tomato paste.

  3. Cover and cook on low for 1/2 hour. Stir in corn kernels and cook another 15 minutes.

  4. Pierce raw sweet potatoes with a fork and microwave on high for 3 minutes. Slice thinly

  5. Pour beef/lentil mixture into an 11x14 casserole dish which has been sprayed with Pam.

  6. Top with sliced sweet potatoes and grated parmesan cheese.

  7. Bake at 350 for about 1/2 hour
