Quick and easy, healthy, high fibre roti to have with Curry or Dahl, or enclose a little sugar in the middle before rolling out for a sweet sugar roti.

Recipe Ingredients for High Fibre 1/2 Chickpea 1/2 Wholemeal Roti

1 c wheat flour
1 c chickpea flour
1 1/2 c boiling water
2 T butter

Recipe Directions for High Fibre 1/2 Chickpea 1/2 Wholemeal Roti

  1. Put flour in a bowl. Mix in boiling water with a fork.

  2. When brave, turn it out onto a floured bench and start kneeding for 2 mins or until it's fully mixed and smooth.

  3. Split into 2 and continue to split each again, until you have 8.

  4. Roll them out into circles, as thin as you can without going overboard.

  5. Peel off bench and put straight into hot pan.

  6. Start rolling the next roti.

  7. When roti starts to puff and bubble, brush a little room temperature or melted butter onto them, and turn them over. Do the same on the other side and remove from heat when done.

  8. Start cooking the next one you just rolled between brushing and turning.

  9. Eat with Curry or Dahl. Yum.
