From Bob's Red Mill High Fiber Hot Cereal/substituted raisins for 1/2 cup chopped dates.

Recipe Ingredients for High Fiber Scottish Oat Muffins

3/4 cup Whole Wheat Pastry Flour
3/4 cup Organic High Fiber Cereal
1/4 cup SPLENDA Brown Sugar Blend
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/3 cup banana
1/2 cup plain yogurt
1 whole egg
2 tbsp canola oil
1/2 tsp vanilla
1/2 cup carrots
1/2 cup raisins
1/2 cup walnuts

Recipe Directions for High Fiber Scottish Oat Muffins

  1. Mix together dry ingredients.

  2. Mix liquid ingredients separately. Combine the two mixtures and stir until moistened. Fold in carrot, dates (raisins) and walnuts.

  3. Lightly grease or line muffin tin with paper cups. Fill 2/3 full. Bake at 400 degrees for 18-20 min. Makes 12 muffins.
