High fiber low cholesterol muffins

Recipe Ingredients for High fiber muffins

2 c. 100% bran cereal
1 1/4 c. skim milk
1 c. all-purpose flour
1/3 c. packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 c. margarine
1/4 c. egg beaters

Recipe Directions for High fiber muffins

  1. 400 F oven

  2. mix milk and bran cereal together and let sit for 5 minutes

  3. add the margarine and egg substitute

  4. mix rest of ingredients in separate bowl

  5. add liquid mixture to the flour mixture, stir until just moistened

  6. bake for 18 minutes

  7. let cool and eat
