Delicious high fiber muffins with multi-grains and bananas.

Recipe Ingredients for High Fiber Muffins

1 cup oatmeal
1/2 cup whole-wheat flour
1/3 cup flax seed meal
1/3 cup wheat germ
1 tbsp baking powder
1/4 tsp salt
1/4 cup orange juice
1/4 cup brown sugar
1/2 cup buttermilk
1/4 cup canola oil
2 egg whites
1/2 tsp baking soda
2 bananas
1/2 cup dried cranberries

Recipe Directions for High Fiber Muffins

  1. Grind oatmeal in blender. Transfer to bowl.

  2. Add other dry ingredients to oatmeal.

  3. In blender, process wet ingredients, brown sugar, and bananas.

  4. Gently blend wet ingredients into dry.

  5. Add cranberries

  6. Line muffin tins with paper cups. Fill.

  7. Bake at 375 for 18 minutes.

  8. Let cool in pan 5 minutes.
