1 egg
1/4 c egg white
1 tbsp psyllium
1 tbsp ground flaxseed
1 c cabbage, shredded
1 spring onion, chopped
1/2 carrot, shredded

Recipe Directions for High-fiber breakfast fritter

Mix liquid ingredients. Whisk in psyllium and flax and let stand 5 minutes. Mix in vegetables. Heat a nonstick pan. Spread mixture to form a flat pancake about 8" in diameter. Cook until edges bubble and look a bit dry; flip and cook until golden brown.
