Psyllium fiber can keep you regular, lower your cholesterol, reduce your risk of heart disease and help manage blood sugar levels. You may have to look in a health food store for the psyllium husks. I found them at a bulk food store.

Recipe Ingredients for High Fiber Banana Chocolate Chip Muffin

3/4 cup skim milk
3/4 cup brown sugar
12 tbsp psyllium husks (3/4 cup)
1 large egg
1 1/2 cups mashed banana (very ripe, freeze then thaw before using)
1 cup whole wheat flour
3/4 cup ground flaxseed
1/2 cup semi-sweet chocolate chips
2 tbsp cinnamon
1 1/2 tsp baking powder
1 tsp baking soda

Recipe Directions for High Fiber Banana Chocolate Chip Muffin

  1. Preheat oven to 400 F (200 C). Line a muffin tin with paper liners.

  2. In a large bowl stir together buttermilk, brown sugar, psyllium, egg and mashed banana. Let sit 10 minutes. Stir well. The reason you use frozen, thawed bananas is that freezing breaks down the cell walls and makes the bananas very mushy which provides the moisture needed for the psyllium.

  3. In a medium bowl whick together whole wheat flour, ground flaxeed, chocolate chips, cinnamon, baking powder, and baking soda.

  4. Pour into psyllium/banana mixture and mix well. The batter will be very thick.

  5. Spoon the batter into 12 muffin cups and bake for 20-25 minutes or until done.

  6. Remove the muffin tin and cool on a wire rack for 3 hours. Store in an airtight ontainer for up to 3 days or freeze for up to 3 months.
