Recipe Ingredients for High Fiber, 1 carb choice Blueberry Muffins

2 large Eggland's Best Egg
3 cup raw Wheat Bran
2 cup Milk, Nonfat, Fluid
1 cup Unsweetened Applesauce
2/3 cup, packed Sugars, Brown
1 tsp Vanilla Extract
2 tsp Cinnamon, Ground
1 cup All Purpose Flour
1 cup Whole Wheat Flour
2 tsp Pure Baking Soda
2 teaspoon Baking Powder
1/2 tsp Salt, Table
3 cup raw Blueberries

Recipe Directions for High Fiber, 1 carb choice Blueberry Muffins

  1. Preheat oven to 375, and prepare 24 muffin tins with cooking spray.

  2. Mix wheat bran and milk together and let soak a few minutes.

  3. Add applesauce, eggs, suar and vanilla. Mix well.

  4. Add flours, cinnamon, b powder, b soda and salt. Mix welll

  5. Fold in blueberries. Fill the 24 muffin tins with equal amounts. Bake 15-18 minutes.
