A soft textured whole wheat bread for baking at high altitude, use Hungarian flour

Recipe Ingredients for High Altitude Whole Wheat Bread

1 oz Active Dry Yeast
2 c Warm Water
1/3 c Maple Syrup
2 tbsp vegetable shortening
2 teaspoons salt
2 1/2 c Whole Grain Flour
2 c All Purpose Flour
1 1/2 tbsp Margarine, Country Crock

Recipe Directions for High Altitude Whole Wheat Bread

  1. Combine all the ingredients, except flour and Country Crock, in order into a large mixing bowl and quickly stir.

  2. Stir in Flour one cup at a time until a stiff dough is formed.

  3. On a well floured surface knead until smooth and satiny. (app. 8 to 10 min)

  4. Split into two balls, place under bowl and allow to set for 15 min.

  5. Grease two 8" x 3" loaf pans with country crock, Form dough balls into loaves and place into pans.

  6. Pre-heat oven to 375 degrees, bake 30-35 min to a Golden Brown color.

  7. Cool on a rack to form a crust, slice into 1/2" slices. Serving size equals one slice.
