This sauce makes for a tasty lunch. You can make a batch on Sunday night and have dinner all week! It is very tasty, so don't be fooled by all the vegeables. It makes an amazing one-course meal.

Recipe Ingredients for Hidden-Vegetable Tomato Sauce

1 tablespoon olive oil
2 carrots, peeled and grated
1 zucchini, chopped
1 cup canned crushed tomatoes
1/4 cup vegetable broth
1 teaspoon sugar
1 teaspoon balsamic vinegar
1 teaspoon dried oregano
1/4 cup mascarpone cheese
12 ounces pasta

Recipe Directions for Hidden-Vegetable Tomato Sauce

  1. Heat the oil the the saucepan for 4 minutes. Add the carrot, and cook for 3 minutes

  2. Add the zucchini tomatoes, broth and sugar and simmer, covered, for 20 minutes.

  3. Add the balsamic vinegar and oregano and cook for5 minutes.

  4. Transfer the sauce to a food processor and blend until smooth. Return it to the saucepan and add the mascarpone cheese

  5. Cook the pasta and toss with sauce. There will be leftover sauce, which can be used in other recipes 9it makes excellent pizzas)
