Recipe Ingredients for hi elevation vanilla vegan cupcakes

1 cup soy milk
1 tsp apple cider vinegar
1 1/4 cups flour
2 tbsp cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup canola oil
3/4 cup sugar
2 1/4 tsp vanilla

Recipe Directions for hi elevation vanilla vegan cupcakes

  1. preheat oven to 350, line muffin tin with cupcake liners

  2. wisk vinegar into soy milk and set aside to curdle

  3. beat oil, soy milk, sugar and vanilla together.

  4. ***sift in flour, cornstarch, baking powder, baking soda and salt.

  5. mix until no lumps remain.

  6. fill cupcake liners 2/3 full and bake for 22 to 25 mins.

  7. cool before frosting

  8. *** add 2 tablespoons of flour for high altitiude
