Recipe Ingredients for HG Pumpkin Cheesecake

80 grams Fiber One 80 Calories Honey Squares
4 tbsp I Can't Believe It's Not Butter! Fat Free
12 packet SPLENDA No Calorie
32 oz Fat Free Cream Cheese
1 cup Egg Beaters
1 cup Pumpkin
6 tsp Sugar
1 tsp Vanilla Extract
0.5 tsp Vanilla Extract
1 tsp Pumpkin Pie Spice

Recipe Directions for HG Pumpkin Cheesecake

  1. 1) For the crust: Crumb the 2 c of fiber one cereal. Add 3 T splenda. Melt 1/4 c fat free butter with 2 T water. Mix all of this together and press into the bottom of a 9" springform pan that has been sprayed with non-stick cooking spray.

  2. 2) For the filling: Blend 32 oz fat free cream cheese, 1 c egg beaters, 1 c pumpkin, 2 T light brown sugar, 1 c splenda, 1 t vanilla extract, and 1 tsp pumpkin pie spice until no lumps remain. Pour over crust.

  3. 3) Bake at 325 degrees for approximately 1 hour 20 minutes. Remove and allow to chill in refrigerator for 3-4 hours (overnight is best). Gently remove side of springform pan.

  4. 4) Make the topping using 3/4 c fat free sour cream, 1/4 c splenda, and 1/2 t vanilla extract. Spread evenly over cheesecake and refrigerate until ready to serve.
