Really tasty dish - serve with cous cous. This dish is typical of Moroccan cooking which is often spicy and aromatic without being too hot. If you like it hotter than this, add harissa.

Recipe Ingredients for Herd Moroccan Chicken

4 breast of chicken
1 tspn olive oil
1 Onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
2 carrots
250 g potato, cubed
1 tspn turmeric
1/2 tspn cinnamon
1 tspn cumin
2 tspn coriander
450 ml stock
2 tbspn Lemon juice
2 tbspn Parsley

Recipe Directions for Herd Moroccan Chicken

  1. Season the chicken and brown in the pan with the oil.

  2. Remove the chicken from the pan, add the chunky vegetables and 3 tablespoons of water, then cover and cook gently for 5 minutes until softened.

  3. Stir in all the spices and cook for a minute.

  4. Add the chicken and the stock, bring to the boil and then cover. Simmer gently for 45 minutes until the meat is tender.

  5. Stir in the lemon juice and add the fresh chopped parsley or coriander to serve.
