Recipe Ingredients for Herbed Stuffed Chicken Breasts

1 oz. goat cheese
1/4 tsp. chopped fresh rosemary
12 oz. skinless, boneless chicken breasts
1 dash salt
1 dash freshly ground black pepper
1/2 lb. asparagus
1/2 tbsp. butter
1/2 tbsp. chopped fresh chives

Recipe Directions for Herbed Stuffed Chicken Breasts

  1. Preheat oven to 400

  2. Combine first 3 ingredients in a small bowl

  3. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket.

  4. Stuff about 3 tbsp cheese mixture into each pocket and close openings with a wooden pick.

  5. Sprinkle chicken evenly with salt and pepper

  6. Heat a large skillet over medium-high heat and coat with cooking spray

  7. Add chicken to pan and cook 4 minutes.

  8. Turn chicken over and place pan in oven.

  9. Bake for 25 minutes until chicken is done.

  10. Let stand 5 minutes.

  11. Discard wooden picks.

  12. Cut chicken diagonally into 1/2" thick slices.

  13. Servie with pan juices.

  14. Combine 1/4 tsp. salt, 1/4 tsp pepper, and 1/2 lb. asparagus on a jelly-roll pan coated with cooking spray and toss gently

  15. Bake 10 minutes until asparagus is crisp-tender

  16. Place asparagus in a large bowl and toss with 1 tbsp. butter and 1 tbsp. chopped fresh chives
