Makes wonderful toast, or an addition to dinner. This recipe makes 2 standard loaves or 24 small rolls

Recipe Ingredients for Herbed Rye Bread/Rolls

1 T active dry yeast
1 T sugar
2 c warm water (100-110 F)
1 T salt
5 T olive oil
2 tsp fresh or dried rosemary
1/2 tsp dried basil
1/4 tsp dried oregano
1/2 tsp ground black pepper
1 tsp fresh or dried thyme
2 cloves garlic, crushed
4 tsp vital wheat gluten
1 c whole wheat flour
1 c rye flour
2 1/2 c bread flour

Recipe Directions for Herbed Rye Bread/Rolls

  1. Dissolve the sugar and yeast in the warm water in a large bowl. Let sit for 10 minutes until foamy.

  2. Stir in the whole wheat flour and the rye flour, followed by the salt, oil, gluten, and spices.

  3. Begin adding the bread flour 1 cup at a time, until it is too stiff to stir.

  4. Turn out onto a floured surface and knead for 5 minutes or so, until the dough becomes elastic and most of the flour is incorporated.

  5. Place in a lightly oiled bowl, cover, and let rise for about 1 hour until double. In the meantime, lightly grease loaf pans or place parchment paper on cookie sheets.

  6. Once risen, punch down dough, divide, and shape into loaves or rolls and place in the pans. Cover loosely, let rise again until double, another hour or so.

  7. Preheat oven to 375 F.

  8. Once risen, remove cover and bake. About 30 minutes for bread, and about 18 minutes for rolls. Crust will be firm and golden, and internal temperature should be approximately 200 degrees F.

  9. Store in airtight container or wrapping.
