Lowfat omelette muffin with lots of flavor

Recipe Ingredients for Herbed omelette muffins

1/3 cup flour
2 eggs, beaten
1/8 cup buttermilk
1/3 cup cottage cheese
1/2 teaspoon baking powder
1/8 cup parmesan
1 teaspoon fresh thyme
1 salt and pepper

Recipe Directions for Herbed omelette muffins

  1. Preheat oven to 400

  2. Mix all ingredients in one large bowl.

  3. Spray five of the muffin cups VERY well and divide batter among them

  4. Cook for 15 to 18 minutes, then top with cheese and brown in oven for another 3 to 5 minutes
