Herbed Meatloaf Recipe

This is a wonderful meatloaf that incorporates all your veggies right into the loaf and adds great flavor.

Recipe Ingredients for Herbed Meatloaf

3 medium carrots, diced
2 stalks of celery, medium, diced
1 medium onion, diced
4 garlic cloves, minced
10 ounces lean ground beef
1 cup brown rice, uncooked
1/2 cup skim milk
6 tbsp Egg Beaters
3 ounces deli ham, chopped
1 tbsp parsley
1/2 tsp rosemary
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Herbed Meatloaf

  1. Preheat oven to 350. Spray 8x4 oaf pan with nonstick cooking spray.

  2. Cook the rice and let cool.

  3. In large nonstick skillet sprayed with nonstick cooking spray, add carrots, celery and onion. Cook over medium heat, stirring frequentl, 8-10 minutes until onion is golden brown (or at least vegetables are semi-soft). Add garlic, cook additional 2 minutes, stirring frequently. Remove from heat, set aside and allow to cool slightly.

  4. In large bowl, combine beef, cooked rice, milk, egg beaters, ham, parsley, rosemary, salt, pepper and reserved, cooled vegetable mixture. Transfer to prepared loaf pan, pressing down firmly. Bake 50-60 minutes, until meatloaf is firm and cooked through. Remove from oven, let stand 5 minutes. Cut into 6 equal slices and serve.
