Recipe Ingredients for Herbed Lentils and Rice

4 cups reduced-sodium chicken broth or vegetable broth
1 cup dry lentils
2 tablespoons dry lentils
1 cup onion, chopped
2 tablespoons onion, chopped
3/4 cup uncooked brown rice
1/4 cup dry white wine, or chicken broth
2 tablespoons dry white wine, or chicken broth
3/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon pepper
1 cups shredded reduced-fat Mozzerella cheese, divided

Recipe Directions for Herbed Lentils and Rice

  1. In a bowl, combine the first 11 ingredients; stir in 1/2 cup cheese.

  2. Transfer to a 1-1/2-qt. baking dish coated with nonstick cooking spray.

  3. Cover and bake at 350 degrees F for 1-1/2 to 2 hours or until lentils and rice are tender and liquid is absorbed, stirring twice.

  4. Uncover; sprinkle with remaining cheese. Bake 2-3 minutes longer or until cheese is melted.
