One-pot herbed lentils. Can be served as a soup with bread or over rice or quinoa. One serving equals one cup.

Recipe Ingredients for Herbed Lentils

15 grams Garlic
1 cup, chopped Onions
1/2 cup, chopped Carrots
1/2 cup, diced Celery
6 cup Organic Chicken Broth
4 1tsp Vegetable Oil, Canola
1/2 tsp Sea Salt
1 teaspoon Thyme
1 tsp Onion Powder
1 tbsp Sage, Ground
1 tsp Oregano, Ground
1 tsp Pepper, Black
11 oz V8 100% Vegetable Juice

Recipe Directions for Herbed Lentils

  1. Heat oil in pan. Add chopped garlic, onion, carrots and celery. Saute until soft.

  2. Add chicken broth, V8 juice, lentils, and spices to taste.

  3. Bring to a boil. Reduce heat, cover, and simmer for 40 minutes or until vegetables and lentils are soft. Remove cover, and simmer down for another 15-20 minutes to reduce liquid slightly and bring out flavor. Taste; adjust seasoning if needed.

  4. Can be served either as a soup or simmered down more to cook down liquid and serve over rice or quinoa.
