Makes 4 servings



Replace dried herbs with fresh if you prefer. 1 tsp dry = 1 tbsp fresh. 4 WW points per slice. Original recipe from WW website but I replaced left-over roast ham with slices, added broccoli for more nutrition and replaced fresh with dried herbs because its easier and what I have in the house. * I have not yet made this.

Recipe Ingredients for Herbed Ham Fritata - ONLY 4 Weight Watchers Points!

3 russet potatoes
4 slices of deli ham
1 1/2 cups regular egg substitute
1 tsp dry parsley
1 tsp dry rosemary
1 tsp oregano
1 dash of salt
1/8 tsp black pepper
1/2 cup chopped broccoli
3/4 cup spinach

Recipe Directions for Herbed Ham Fritata - ONLY 4 Weight Watchers Points!

Coat non-stick ovenproof skillet with cooking spray, add potatoes and cook over medium heat stirring occasionally until golden brown and tender, about 10 minutes. Note: Add water by the tablespoon to prevent sticking, if necessary. Add ham, egg substitute, broccoli, herbs, salt and pepper, and cook until almost firm, about 10 minutes. Transfer skillet to broiler and broil until browned on top, about 3 to 5 minutes. Cut into 4 wedges and serve.
