Recipe Ingredients for HERBED CHICKEN MEATLOAF

1 onion
1 tsp olive oil
2 lb ground chicken
1/2 cup breadcrumbs
1/3 cup light mayonnaise
2 large eggs
2 tbsp parsley
2 tsp greek seasoning
1/2 tsp lemon zest
1/4 tsp salt
1/4 tsp ground pepper

Recipe Directions for HERBED CHICKEN MEATLOAF

  1. Preheat oven to 350. sautee onion in small skillet over med-high heat for 5-7 min or untill tender.

  2. Stir together ground chicken, next 8 ingredients, and onion in a large bowl until just combined.

  3. Place mixture in a lightly greased 9x5 baking dish. Bake at 350 for one hour to one hour and 10 min, or until thermometer reaches 165. Let stand for 10 min before slicing.
