Recipe Ingredients for Herb-Roasted Turkey Breast

7 lbs turkey breast, whole bone-in
1 tbs garlic, minced
2 tsp dry mustard
1 tbs fresh rosemary, chopped
1 tbs fresh sage, chopped
1 tsp fresh thyme, chopped
1/2 tsp kosher salt
1 tsp freshly ground black pepper
2 tbs lemon juice, freshly squeezed
2 tbs extra virgin olive oil
1 cup dry white wine

Recipe Directions for Herb-Roasted Turkey Breast

  1. Preheat teh oven to 325 degrees F. Place the turkey breast, skin side up, on a rack in a roasting pan.

  2. In a small bowl, combine the garlic, mustard, heerbs, salt, pepper, olive oil, and lemon juice to make a paste.

  3. Loosen the skin from teh meat gently with your fingers and smear half of teh paste directly on the meat. Spread the remaining paste evenly on the skin.

  4. Pour the wine ino the bottom of the roasting pan.

  5. Roast the turkey for 1 3/4 to 2 hours, until the skin is golden brown and an instant-read thermometer registers 165 degrees F when inserted into the thickest and meatiest areas of the breast. (Can test in several places)

  6. If the skin is over-browning, cover the breast loosley with aluminum foil.

  7. When the turkey is done, cover with foil and allow it to rest at room temperature for 15 minutes.

  8. Can slice and serve with teh pan juices spooned over the turkey or chill, remove skin and thinly slice for sandwiches.
