A healthy way to roast potatoes- yummy, too!

Recipe Ingredients for Herb Roasted Potatoes

8 Russet Potatoes
1/3 c. olive oil
3 cloves garlic
1 tbs. salt
1 tsp. pepper
1 tsp. thyme

Recipe Directions for Herb Roasted Potatoes

  1. Preheat oven to 450. Cut potatoes in half and then each half into thirds. Combine the olive oil, minced garlic cloves, salt, pepper & thyme (or rosemary) into a ziplock bag or large mixing bowl. Add in potatoes & coat. Bake for 45-50 minutes. I like to place them skin side down so both cut sides are exposed and you don't need to flip them while baking.

  2. Great with Roasted Vegetables :)
