Recipe Ingredients for Herb Roasted Pork with Honey Dijon Mustard & Wild Rice Pilaf

1 pound pork tenderloin,sliced into 4 equal slices
1/2 cup honey Dijon mustard, divided (recommended: French's)
3 tablespoons fines herbs (recommended: Spice Islands)
1/2 cup organic chicken broth (recommended: Swanson)
12 ounces (1 cup) pearl onions, fresh or frozen(recommended: Frozen C and W)
6 ounce box) long-grain white and wild rice blend (recommended: Uncle Ben's)
2 tablespoons dried cranberries,chopped
3 tablespoons green onion,sliced
2 tablespoons slivered almonds, toasted

Recipe Directions for Herb Roasted Pork with Honey Dijon Mustard & Wild Rice Pilaf

  1. Preheat oven to 400 degrees F.

  2. For Pork Tenderloin:

  3. Line a baking sheet with foil and spray with olive oil cooking spray; set aside.

  4. Rinse tenderloin under cold water and pat dry with paper towels.

  5. Cut into 4 servings.

  6. Use a pastry brush to brush 1/4 cup mustard on pork loin.

  7. Sprinkle tenderloin pieces with 2 tablespoons of the herbs.

  8. Place on prepared baking sheet.

  9. Roast in preheated oven for 18 to 20 minutes.

  10. In a small saucepan over medium heat, combine chicken broth and pearl onions.

  11. Reduce liquid by half and add remaining 1/4 cup mustard and 1 tablespoon fines herbs.

  12. Heat thoroughly.

  13. For Wild Rice Pilaf:

  14. Prepare rice according to manufacturer's instructions, adding cranberries at the same time as the rice.

  15. When rice is done, fold in green onions and almonds.

  16. Serve roasted tenderloins hot with onion sauce and Wild Rice Pilaf.
