adapted from a recipe I use for Thanksgiving turkey

Recipe Ingredients for Herb Roasted Chicken

16 oz chicken thighs
2 cloves of garlic, pressed
1/4 cup chicken stock
1 small onion, minced
1 tbsp fresh rosemary
1 tbsp fresh thyme
1 tsp oregano
1/4 cup olive oil
1 salt
1 pepper

Recipe Directions for Herb Roasted Chicken

  1. Preheat oven to 350.

  2. Rinse then pat dry the chicken

  3. In a small bowl combine garlic, onion, rosemary, thyme,oregano and olive oil.

  4. Lift skin on chicken and stuff herb mixture between skin and meat.

  5. sprinkle skin with salt and pepper.

  6. Place chicken and stock in baking dish

  7. Start checking chicken after 45 minutes

  8. Internal temperature should register about 165 on a meat thermometer inserted into the meaty part of the thigh.
